  • 1 tbsp extra virgin olive oil
  • 1 cup kale leaves torn
  • 1 cup brown rice cooked
  • 1/2 cup black beans
  • 1 tsp lime juice
  • 1 tbsp cilantro chopped

  • Place the kale leaves into a large bowl, and drizzle with the olive oil and a pinch of salt. Massage the leaves with your hands until they become bright green and tender, about 1 minute.
  • Add the brown rice, massaged kale, and black beans to a salad bowl. Drizzle with the lime juice, sprinkle with cilantro, and garnish with desired toppings.
