Chickpea Avocado Toast

  • 2 slices sourdough bread or other bread of choice
  • ½ ripe avocado
  • ½ cup chickpeas cooked
  • 1 cup leafy greens or microgreens
  • 1 tbsp extra virgin olive oil
  • 1 pinch sea salt and black pepper to taste


  • Toast the bread to desired doneness.
  • Slice the avocado, and lightly mash half onto each slice bread.
  • Top the avocado base with chickpeas and greens.
  • Drizzle with olive oil and a pinch of sea salt and black pepper.
